Wild Blueberry Squares

Today, I made delicious wild blueberry squares and I am excited to share my recipe with you. Last week, my partner and I went to pick wild blueberries on the side of the highway. We were surrounded by blueberry bushes that seemed to extend for miles and miles along the highway. It was thrilling to pick the tiny berries as cars raced by. Sitting in the passenger seat with a bucket filled with wild blueberries resting on my lap, I was overcome with an urge to bake!

As you may know, I am currently studying Holistic Nutrition. I often chose to study and write assignments in cafés because I love the atmosphere and there are fewer distractions than being at home. The window display of bakery items in these coffee shops is always tempting, but I refrain from indulging in these baked treats because I know they have little nutritional value and contain a lot of sugar. When I study, the last thing I want is to go from being really energetic to really tired and irritable because of blood sugar fluctuations. Those baked goods will do that to you!

A wild blueberry square is a great studying snack. I used coconut flour because it’s full of fiber and it keeps my blood sugar levels stable while I’m trying to focus on studying. If you want to try going grain-free or gluten-free for a while, I recommend experimenting with coconut flour, which is essentially coconut meat (no grains or gluten here!). It’s one of the least expensive alternative flours and in my opinion, it can yield great results if you know how to work with it.

I encourage you to purchase a bag of organic coconut flour next time you visit the grocery store and try out this recipe. What have you got to lose? I guarantee you will enjoy what comes of it.



Wild Blueberry Squares


Wet Ingredients

  • 2 eggs beaten
  • 1/4 cup nut milk of choice
  • 1/4 cup melted coconut oil
  • Up to 2 tbsp honey
  • 2 Tsp vanilla

Dry Ingredients

  • 1/2 cup coconut flour
  • 1/2 Tsp baking soda
  • 1/4 Tsp salt
  • Blueberries


  1. Preheat the oven to 350.
  2. Grease a 9×12 baking dish with coconut oil.
  3. In a bowl, whisk together wet ingredients.
  4. In another bowl, mix dry ingredients with a spoon.
  5. Pour dry ingredients into wet ingredients and mix thoroughly. Fold in blueberries.
  6. Spread mix in the baking dish with a spatula and press down firmly with your fingers to pack it tight. Bake for 20 minutes.
